Chicken and Sausage Gumbo
First you make your roux......
**The Roux**
1 c. flour
1 c. oil
Mix flour and oil on stovetop. Constantly stir as to not burn the roux or it will be nassstttyyyy. Trust me. It should get to the color of caramel or a penny. You have your roux. Or you can do like we do and buy it already made. I don't know if that is everywhere or just here. You can order
roux online that is already made.
** Add roux to boiling water and boil for about an hour.
**The Gumbo**
1 cut-up chicken
1 lb smoked sausage (sliced) (I also like to andouille sausage w/regular smoked sausage.Hubby likes ALOT of sausage)
1 cup green onions (chopped)
1 cup onion chopped also
Cajun seasonings
**Season chicken with Cajun seasonings. (We prefer
Tony Chachere's)
** Add sausage to pot.
**Add onions
**Cook for another hour. If gumbo is getting to thick, add more water.
** Add chicken. Cook for 30-45 minutes or until chicken is tender.
** Add green onions.
** Cook for another 5-10 minutes. Turn off fire.
Serve over rice. You will find out there that there are many different recipes for Gumbo. You can add many things such as garlic, celery, okra etc. We usually just make ours with the ingredients above. Enjoy!!
